SUPER MOIST PUMPKIN BREAD
Pumpkin season is at its peak, which means we’re making the most out of it! Super moist and delicious pumpkin bread is a perfect little treat to bring you a little sugar and spice into your life. Requires very little effort to make, you’ll simply love it!
Prep time 10 minutes / Cook time: 50 minutes / Serves: 8 servings
INGREDIENTS:
2 cups of oat flour (or you can blend oats into fresh oat flour)
1 can of pumpkin puree ( you can also use fresh baked pumpkin)
3 eggs
1/3 cup of coconut oil
1/2 cup of maple syrup
1/2 teaspoon of baking soda
1 teaspoon of baking powder
2 teaspoons of cinnamon
1/2 teaspoon of nutmeg
1 teaspoon of pumpkin spice (optional)
1/3 cup of chopped walnuts
INSTRUCTIONS:
Whisk together pumpkin puree, coconut oil, maple syrup, eggs.
Add baking powder, baking soda, cinnamon, nutmeg, pumpkin spice. Mix again.
Fold in flour.
Pour the batter into a greased 9×5 inch loaf pan. Add in chopped walnuts on top.
Bake for about 50 minutes at 350F.
Let cool for about 10 minutes. Serve warm and enjoy!
