SUPER MOIST PUMPKIN BREAD

If you love a good banana bread, you need to try this seasonal pumpkin alternative. Gluten-free.

Pumpkin season is at its peak, which means we’re making the most out of it! Super moist and delicious pumpkin bread is a perfect little treat to bring you a little sugar and spice into your life. Requires very little effort to make, you’ll simply love it!

Prep time 10 minutes / Cook time: 50 minutes / Serves: 8 servings

INGREDIENTS:

  • 2 cups of oat flour (or you can blend oats into fresh oat flour)

  • 1 can of pumpkin puree ( you can also use fresh baked pumpkin)

  • 3 eggs

  • 1/3 cup of coconut oil

  • 1/2 cup of maple syrup

  • 1/2 teaspoon of baking soda

  • 1 teaspoon of baking powder

  • 2 teaspoons of cinnamon

  • 1/2 teaspoon of nutmeg

  • 1 teaspoon of pumpkin spice (optional)

  • 1/3 cup of chopped walnuts

INSTRUCTIONS:

  1. Whisk together pumpkin puree, coconut oil, maple syrup, eggs.

  2. Add baking powder, baking soda, cinnamon, nutmeg, pumpkin spice. Mix again.

  3. Fold in flour.

  4. Pour the batter into a greased 9×5 inch loaf pan. Add in chopped walnuts on top.

  5. Bake for about 50 minutes at 350F.

  6. Let cool for about 10 minutes. Serve warm and enjoy!
