FLUFFY APPLE CINNAMON ROLLS
I love cooking and baking seasonally, especially when I get to enjoy a delicious meal without any added preservatives. These apple cinnamon rolls are a healthier alternative to a warm gooey cinnamon roll. It’s a nice mixture of apple pie and cinnamon rolls. They can be easily reheated and taste fresh, like they just came out of the oven for 48 hours.
However, it’s a little bit of a process to make them. So set some time aside, bake, relax and enjoy a delicious dessert this weekend.
Prep time + Clean time : 3 hours / Bake time: 25 mins / Serves: about 16 rolls
INGREDIENTS:
Yeast Mixture:
150 ml of warm milk
1 tablespoon of sugar
1 packet of quick instant yeast
Dough Mixture:
500 g of flour
5 tablespoons of sugar
100 g of butter (melted)
2 egg yolks
150 ml of warm milk
pinch of salt
yeast mixture
Apple Cinnamon Filling:
2 apples diced
2 tablespoons of melted butter or coconut oil
1 teaspoon of vanilla extract (add to melted butter)
2 tablespoons of brown sugar
about 2 tablespoons of ground cinnamon powder (honestly more is better, make sure your dough is covered with plenty)
INSTRUCTIONS:
Prepare the yeast mixture. Mix all ingredients together, and let sit in a warm place (microwave) for about 15-20 minutes until bubbly.
In a large bowl combine all dry ingredients. Add in yeast mixture, and mix in a stand mixer for about 10 minutes on 2-3 speed.
If the dough is too runny, add flour. If it’s dry, add a tablespoon of warm water.
Mix until all ingredients are combined on a floured surface. Dust a medium bowl with some flour. Add the mixed dough into a bowl, dust with more flour. Cover with a pot lid. Place in a warm place for about 50-60 minutes. I highly suggest getting a larger bowl and pouring hot water into it. Then, place the bowl with dough into it. Cover with a pot lid and a tea towel. This will give you the best fluff results. The dough needs to rise in a warm climate; avoid opening windows or blasting AC in your kitchen until ready.
While the dough is rising, prepare your apple filling mixture. Cut apples into small cubes 1/2 inch x 1/2 inch. Melt butter and vanilla extract.
When the dough is done rising, add flour to a clean kitchen surface. Divide into two parts. Save the second part in the bowl, until ready.
Roll out the dough, until it's 1/2 inch thick. Spread the melted butter, add cinnamon, and sugar. Sprinkle apples, and add more cinnamon. If it seems too dry, add additional melted butter on top of it. The more butter you add the gooey-er the apple cinnamon roll will be.
Cut the dough vertically, from top to bottom. Each roll should be about 2.5/3 inch wide.
Roll them one by one, and place on a oiled baking dish. You can place them close to one another.
Bake on 350F for about 20-25 mins until golden brown. Double check the bottom if it’s baked all the way through before removing from the oven.
Sprinkle with a teaspoon of powdered sugar, serve warm.
Enjoy within two days of making.
* Don’t forget you still have second batch of your dough, you can either make more apple cinnamon rolls or trade cinnamon for chocolate, peanut butter, nuts or jam filling.
